Salmon and Broccoli Crustless Quiche

INGREDIENTS

  • 1 Tbsp butter
  • 1 medium onion, chopped
  • 1 cup chopped broccoli
  • 1 cup milk
  • 4 large eggs
  • 3/4 cup biscuit mix
  • 1/4 tsp dried dill weed
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 213 gram tin canned salmon (drained and flaked)
  • 1 cup grated cheese

METHOD

  1. Melt butter and saute onion for 4 minutes or until tender.
  2. Stir in broccoli. Cook 1 minute.
  3. Beat together eggs, biscuit mix, dill, salt and pepper. Stir in salmon, cheese and broccoli mixture.
  4. Pour into greased 10-inch pie plate. Bake at 400 F for 30-35 minutes or until knife inserted close to centre comes out clean.
  5. Let stand for 5 minutes.

Serves 6 to 8.
