Black Bean Salad

From Foodstuffs Hot Off the Griddle, May 1993. A classic.

INGREDIENTS

  • 4 Tbsp orange juice
  • 1 Tbsp lemon juice
  • 1 clove garlic (finely minced)
  • 1/2 tsp Dijon mustard
  • 1/2 c salad oil (canola’s good)
  • 3 c black beans, cooked
  • 1 c fresh or frozen corn
  • 1 medium tomato, chopped
  • 1 small onion, diced
  • choped parsley
  • salt and pepper

METHOD

  1. Whisk together dressing ingredients.
  2. Add other ingredients and toss
    together.
  3. Marinate 3 hours, or better
    still – overnight.

Serves 8.
