Black Bean Salad
From Foodstuffs Hot Off the Griddle, May 1993. A classic.
INGREDIENTS
- 4 Tbsp orange juice
- 1 Tbsp lemon juice
- 1 clove garlic (finely minced)
- 1/2 tsp Dijon mustard
- 1/2 c salad oil (canola’s good)
- 3 c black beans, cooked
- 1 c fresh or frozen corn
- 1 medium tomato, chopped
- 1 small onion, diced
- choped parsley
- salt and pepper
METHOD
- Whisk together dressing ingredients.
- Add other ingredients and toss
together.
- Marinate 3 hours, or better
still – overnight.
Serves 8.
