Blueberry Sauce

Delicious on pancakes, waffles, or fine vanilla ice cream. Originally published in Foodstuffs Hot Off the Griddle, July 1994.

INGREDIENTS

  • 1 pint fresh blueberries
  • 1 cup orange juice
  • 1 cup water
  • 1/2 to 3/4 cup sugar
  • 1 Tbsp cornstarch
  • 1/4 cup water
  • 1/2 tsp almond extract
  • 1/8 tsp cinnamon

METHOD

  1. Place blueberries in a saucepan with orange juice, 1 cup water, and sugar.
  2. Bring to a boil.
  3. Thicken with cornstarch diluted in 1/4 cup water.
  4. Flavor with almond extract & cinnamon.
