Butterscotch Confetti Squares and Alternative version

Butterscotch Confetti Squares

1 cup peanut butter (you can use ½ cup if you want it less peanutty and more butterscotch-y)
½ cup good quality butter
250 grams of butterscotch baking chips (small bag)
400 grams of “fruit flavoured” coloured marshmallows (big bag)

Melt the first three ingredients in a pot until smooth. Let it cool slightly, until you can touch the pot without pain. Then stir in the marshmallows and put into a greased 8x8 pan lined with parchment paper. Refrigerate until completely cool and then cut into squares and store in the freezer. 

Alternate (vegan) version! (by Lovely Bites)

Nutiva chocolate hazelnut spread instead of peanut butter
Vegan butter (like earth balance or coconut oil)
Semi sweet or dark chocolate chips
Vegan Peppermint marshmallows by Dandies!

Cook it all the same way and maybe ad a few drops of peppermint extract. Yummy!!
