Banana (or Pumpkin) Teff Energy Bar

vegan/wheat and gluten free/naturally sweetened

  • ½ cup flax meal
  • 1 cup rice flour
  • 1 cup teff flour
  • 2 tablespoons teff grain (optional)
  • 1 cup oats
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 tablespoon xanthan gum
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • ¾ cup raw sugar
  • 1 cup vegan butter or margarine  (chilled)
  • ½ cup maple syrup
  • 2 bananas pureed or 1 cup pumpkin puree

If making banana bar add:

  • 1 cup walnuts

If making pumpkin bar add:

  •  ½ cup pumpkin seeds
  • ½ cup dried cranberries
  • 1 teaspoon cloves
  • 1 teaspoon ginger
  • ½ teaspoon nutmeg
  • 1 orange zested

 
Preheat over to 350 degrees Fahrenheit
Mix all dry ingredients including spices, raw sugar, and orange zest (if using) in stand mixer with paddle attachment or by hand. Cut in chunks of the vegan butter. Add nuts or pumpkin seeds and dried cranberries. Add maple syrup and banana puree or pumpkin puree. Mix until it all comes together.
Press mixture into a 9×9 pan.  Bake 25-30 Minutes.  Cool. Cut into bars.
