Banana Walnut Muffins

From Gwyneth Paltrow’s wonderful book of recipes and reminiscence. 

Tried and recommended by Marissa… This super-easy recipe is wheat free and vegan!

INGREDIENTS

  • 1/4 cup canola oil
  • 1 cup whole spelt flour
  • 1 cup light spelt flour
  • 1/2 cup barley flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 very ripe bananas
  • 1/4 cup brown rice syrup
  • 1/2 cup maple syrup
  • 1 Tbsp vanilla extract
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts

METHOD

  1. Preheat oven to 350F.
  2. Line a 12-cup muffin tin with unbleached liners.
  3. Combine dry and wet ingredients separately, then mix together.
  4. Fill muffin tins and bake for 25 minutes or until done.
