Peach Cobbler

INGREDIENTS

  • 1 1/2 cups sliced fresh peaches
  • 3/4 cup water
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup granulated sugar
  • 1 Tbsp soft butter
  • 1 Tbsp milk
  • 1/4 tsp almond flavouring
  • 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

METHOD

  1. Bring peaches, water and 1/2 cup sugar to a boil.
  2. Keep peach mixture hot while making the batter.
  3. Beat egg, 1/2 cup sugar and butter until fluffy.
  4. Mix in milk & flavouring, then sifted flour, baking powder & salt.
  5. Spread batter into greased 8 × 8 inch pan.
  6. Pour peach mixture over all.
  7. Bake in hot oven, 375 degrees F, for 30 minutes.

Makes 6 healthful servings :)
