No need to soak overnight, and no need to cook forever. Tapioca in a flash!
- 1/3 cup sugar
- 3 Tbsp minute tapioca
- 2 3/4 cup milk
- 1 egg, beaten well
- 1 tsp vanilla extract
- Mix sugar, tapioca, milk and egg in a saucepan; let set 5 minutes.
- Cook on medium heat, stirring constantly, til mixture comes to a full boil.
- Remove from heat, then stir in vanilla.
- Cool 20 minutes, then stir.
Serve warm or cold.
