Pumpkin Muffins

COMBINE . . .

  • 2 eggs
  • 1 cup brown sugar
  • 2/3 cup oil
  • 1 cup (7 oz) pumpkin

MIX TOGETHER . . .

  • 1 1/2 cup flour
  • 1 tsp cinnamon (or to taste)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt

Add to wet ingredients.

THEN ADD . . .

  • 1/2 cup raisins
  • 1 tsp vanilla
  • walnuts if desired

Spoon into muffin tins.
Bake in preheated 350F oven for 15 to 20 minutes.

Makes 12 medium muffins.
